1.Frozen Yogurt (Fro-Yo) Fruit Bites
- Frozen yogurt bites couldn't be simpler to make. Just layer yogurt, and various of fruit that you like in mini muffin cups, then freeze. You can place them in a bowl and serve them right away, or you can store them in zip lock bags
- These fro-yo fruit bites make the perfect breakfast or healthy any-time snack.
INGREDIENTS
- 1 1/2 c. plain yogurt
- 1/4 c. whole milk
- 2 tsp. honey
- 1/2 tsp. pure vanilla extract
- 1/2 c. blueberries
- 1/2 c. strawberries, quartered
- 1/2 c. raspberries
DIRECTIONS
- 1.In a bowl, combine yogurt, milk, honey and vanilla and whisk until smooth.
- 2.In an ice tray or any shape of mouldes, distribute fruit in each of the cube molds.
- 3.Spoon yogurt mixture over fruit, filling molds completely. Freeze for 5 hours, or until frozen solid.

Here’s a different way to enjoy cauliflower- as a yummy ham and cheddar muffin! These muffins are super quick to assemble and make a great grab-and-go snack or breakfast. Enjoy these topped with a jalapeno slice for an extra flavor kick.You won't miss the carbs when there's ham and cheese involved.
INGREDIENTS
- 1 large cauliflower (or about 3 cups riced cauliflower)
- 6 oz. diced ham
- 1/2 c. baby spinach
- 1/2 c. finely chopped onion
- 5 Eggs, beaten
- 1/2 tsp. garlic powder
- 1 c. shredded Cheddar
- kosher salt
- Pinch cayenne pepper
- Freshly ground black pepper
DIRECTIONS
- 1.Preheat oven to 375 degrees F. On a box grater or in a food processor, grate cauliflower and transfer to a large bowl.
- 2.Place cauliflower in paper towels or cheesecloth and wring out any excess water.
- 3.Add eggs, cheddar cheese, garlic powder and whisk until combined. Fold in cheddar cheese, ham, spinach and onion.
- 4.Grease a muffin tin with cooking spray, then fill each one about two-thirds full.
- 5.Bake for about 20-25 minutes, or until lightly golden.
